Closing this for now. The new objstore version has two breaking changes that affect us:

1. ObjProvider, GCS, S3 constants moved from objstore/client to the root objstore package
2. WithRecursiveIter changed its signature from func() IterOption to returning IterOption directly

The first one is easy to fix, but the second one breaks polarsignals/iceberg-go which still uses the old API. Until iceberg-go is updated or removed, we can't take this update.
