external-dns-operator: release-1.2: Change cluster profile to aws-qe for shared-vpc test

Update CI configuration for EDO release-1.2 with a different cluster-profile aws-qe which has the required
.awscred_shared_account credentials for shared VPC testing.

The change was already done for the main EDO branch in PR #66025.
