update contributors

@LinguList As we had talked about, here is the short fix for the Contributors table to add Simon's `J.'. I also changed it in the zenodo.json, but that is probably created automatically based on the Contributor table?

Zenodo.json is not created automatically, I added it at some point, to force that it is properly quoted in Zenodo, and we don't have to do too much, as far as I remember.
