Turn on Mermaid support in Docusaurus by enabling mermaid in the markdown config and adding the @docusaurus/theme-mermaid theme. Testable by checking the rendering of the mermaid diagram at https://docs.convex.world/docs/tutorial/networks#development-workflow
Updated manual-deployment.md file to show the --version flag, as checking through a command as previously shown causes an error.
