Reopen: Adding latest tag to image #17

Creating new issue as I don't have the permissions to re-open #4
Given that we are using this image as a base image to build images for hosting static content, we should not encounter the imagepullpolicy issue.
In case we do decide to not have the latest tag updated, we should:
- Update the documentation (readme)
- Considering remove the latest tag altogether - this would however have an unintended impact on anyone using the latest tag right now.
