Review all log lines to use structured logging

We should do this generally, and review all our logging to make sure it uses consistent, structured logging where relevant.

We should also take #1324 into account, with #1802 as a first wip implementation. i think normalizing the logging, with eg. the sdk would be important, and i am not sure, if this should wait for the migration.

Good point. Let's leave the issue open but I agree maybe this should all be one-step, or at least there's some inter-dependencies here.

👋 Hi working on it. Sorry! This kind of fell of my radar with dayjob stuff, but Adam and I will get back on #1802 and clear the review comments and merge in main and see where we are
