Add Post-processing basic statistical analysis eg Variance/ Standard Deviation for all routines

This is functionality that should probably still be included as part of the new post-processing library (as a set of functions that can work on the data perhaps?) Maff Glover (@mo-mglover) what kind of things would be useful?
