Simplify Offline Deployment with Unified Configuration and Model Download Script

For offline machines, deploying LM-polygraph requires extensive modification of code imported from Huggingface, such as NLI models, which are dispersed across many files.

This makes it challenging for new users to quickly adapt the framework. Could LM-Polygraph consolidate these paths into a single configuration file and provide a script to download all necessary models? This would greatly improve the framework's usability.

Thank you for the suggestion. For polygraph_eval script, every stat calculator and estimator could be configured from the external yaml config file. The default behavior for the estimate_uncertainty function is specified in the "lm_polygraph/defaults" catalog.

We could provide a script for downloading everything, required for the estimate_uncertainty function.
